Roasted chicken salad sandwich

A refreshing and healthy spin on a classic chicken salad sandwich

Ingredients

– 3.5 oz roasted chicken
– 50 g plain Greek yogurt, 2%
– 1/2 cup cucumber, diced
– 1/2 cup cherry tomatoes, halved
– 1 Tbsp mint [can add more if you'd like]
– 1 Tbsp dill [can add more if you'd like]
– 1 Tbsp parsley [can add more if you'd like]
– juice from 1/4 - 1/2 lemon
– salt and pepper to taste
– 2 slices whole wheat bread

Directions

1. Place chicken, cucumber, tomatoes, yogurt, fresh herbs and lemon juice in a bowl and throughly mix
2. Season to taste and store in the refrigerator

At meal time

1. Add the chicken salad to bread to assemble the sandwich
