Couscous and roasted chicken with a tomato and cucumber salad


A lite, satisfying meal packed with fresh herbs


– 3/4 cup whole wheat couscous, cooked
– 3.5 oz roasted chicken
– 1/2 cup cherry tomatoes, halved
– 1/2 cup cucumbers, diced
– 1 Tbsp dill [can add more if you'd like]
– 1 Tbsp mint [can add more if you'd like]
– 1 Tbsp parsley [can add more if you'd like]
– 1 tsp olive oil
– juice from 1/4 - 1/2 lemon
– salt to taste

Note: can be enjoyed hot or cold [if you prefer hot, simply heat couscous and chicken on the stove over high heat with a splash of water or heat in the microwave]


1. Plate couscous and chicken
2. Place cucumber, tomatoes, fresh herbs, lemon juice and oil in a bowl and throughly mix
3. Season to taste and add to plate
