Pita stuffed meatball sandwich with zucchini and tomato sauce


A healthy, warm and filling meatball sub


– 3.5 oz meatballs
– 1/2 - 1 cup roasted zucchini
– shakshuka sauce
– 1 whole wheat pita


1. Heat meatballs and zucchini on the stove over medium-high heat with a splash of water or heat in the microwave
2. In a separate pan, heat the shakshuka sauce
3. Toast pita bread, cut in half and split open
4. Stuff with zucchini and meatballs
5. Top with shakshuka sauce
