Harty salad with couscous

A crisp, delicious salad packed with protein and whole grains

Ingredients

– 1 1/2 cups lettuce, chopped
– 1/2 cups radicchio, sliced
– 1/4 cup fennel, sliced
– 3/4 cup whole wheat couscous, cooked
– 1/2 cup butter beans
– 2 hard-boiled eggs, 1 yolk removed
– 2 tsp olive oil
– juice from 1/2 lemon
– salt

Directions

1. Wash and cut lettuce
2. Peel and discard outer layer of radicchio, slice thin
3. Wash fennel and slice thin
4. Drain beans and rinse with water
5. Peel and slice hard-boiled eggs, discard one yolk
6. Place lettuce, radicchio and fennel in a to-go container
7. Top with couscous, butter beans and hard-boiled eggs
8. In a separate small jar, mix lemon juice and olive oil with a pinch or two of salt
