Curry spiced egg salad sandwich


A spin on a classic egg salad that will leave your taste buds dancing


– 2 hard-boiled eggs, peeled
– 1/3 cup plain Greek yogurt, 2%
– 1/2 cup cucumber, diced
– juice from 1/4 lemon
– 1-2 tsp curry powder [season to taste]
– salt
– pepper
– 2 slices whole wheat bread


1. Place yogurt, cucumber, lemon juice, curry powder, salt and pepper in a Tupperware and mix
2. Add whole hard-boiled eggs and place in the refrigerator 

At meal time

1. Dice hard-boiled eggs and mix with spiced yogurt
2. Place on bread to assemble sandwich
