Chopped chicken salad with feta and crispy pita

A hearty, colorful salad packed with flavor and crunch

Ingredients

– 1.5 cups lettuce, chopped
– 1/2 cup radicchio, sliced
– 1/2 cup cucumber, sliced
– 1/2 cup cherry tomatoes, halved
– 3.5 oz roasted chicken
– 1 oz feta cheese
– 1 whole wheat pita
– 1-2 Tbsp red wine vinegar
– salt

Directions

1. Pre-heat oven to 350 F
2. Place pita on oven rack and toast until crunchy
3. Wash and cut lettuce
4. Peel and discard outer layer of radicchio, slice thin
5. Place lettuce and radicchio in a bowl, top with cucumber, tomatoes and chicken
6. Dress with red wine vinegar and toss
7. Season with salt to taste
8. Crumble feta on top
9. Crumble crunchy pita on top
