Watermelon, cucumber and feta salad with mint and sauteed chicken

A lovely summer salad that’s crisp, colorful and balanced 

Ingredients

– 2/3 cup farro, cooked
– 3.5 oz sauteed chicken
– 1/2 cup watermelon, diced
– 1/2 cup cucumber, sliced
– 1 oz or 4 dice feta cheese, crumbled
– fresh lemon juice
– mint

Directions

1. Plate farro on a large plate or in a large bowl
2. Top with watermelon, cucumber, chicken, feta and mint
3. Add fresh lemon juice and mint
