Sauteed chicken and farro with a side salad


A simple and delicious dish that you can quickly assemble during the week


– 2/3 cup farro, cooked
– 3.5 oz sauteed chicken
– 1/2 cup tomato, diced
– 1/2 cup cucumber, diced
– 1/4 red onion, thinly sliced
– 1 tsp olive oil
– fresh lemon juice
– salt


1. Place tomato, cucumber and onion in a bowl
2. Drizzle with olive oil and lemon juice, toss and season to taste
3. Re-heat farro and chicken on the stove over medium heat with a splash of water or heat in the microwave
