Tuna pasta with sauteed spinach


A traditional italian dish with some added greens for fiber and flavor


– 1/2 cup whole grain penne pasta, dry
– 80 g tuna
– 1 cup spinach, frozen
– 2 tsp olive oil
– 2 cloves garlic
– salt and pepper


1. Remove spinach from freezer
2. In a pot, bring salted water to a boil
3. Add pasta and cook according to package directions (cook for 1-2 min less for al dente pasta + reserve 1/3 cup pasta water before draining)
4. Heat a drizzle of olive oil in a nonstick skillet over medium-high heat, add garlic and saute for 1 min
5. Add spinach and saute for additional 2-4 minutes
6. Add canned tuna and saute until spinach and tuna are both hot
7. Fold in cooked pasta and slowly add reserved pasta water to coat noodles (you likely won't need it all)
8. Transfer to a bowl and season with salt and pepper
