Chicken tacos with easy slaw


A classic with a refreshing twist that's sure to satisfy


– 2 small or 1 large tortilla[s]
– 5 oz. sauteed chicken [see batch cook recipe]
– 1/2 head green cabbage, shredded
– 1/4 red onion, sliced thin
– 3 oz. yogurt
– 1/4 avocado
– juice from 1 lime
– juice from 1/4 lemon
– water [to reheat]
– salt


1. Pre-heat oven to 350 F  
2. Place slice red onion in a bowl of cold water
3. Place tortillas on oven rack to warm
4. Place shredded cabbage in a large bowl and drain onion
5. Add onion to bowl along with *yogurt, lemon and lime juice and throughly mix [*keep yogurt and citrus in a separate container if packing to mix before eating]
6. Season to taste with salt
7. Heat a drizzle of water in a nonstick skillet over high heat and re-heat cooked chicken, roughly 3 minutes
8. Assemble tacos and top with sliced avocado
